About the Author
John Coletta is executive chef and managing partner at Quartino Ristorante Pizzeria Wine Bar in Chicago, Illinois. Coletta's father was also a chef, and it has been his life's work to replicate, reinvent and serve the food of his childhood.
Nancy Ross Ryan has coauthored The Berghoff Family Cookbook, The Berghoff Café Cookbook, All New Joy of Cooking bread chapter, and Great Chefs: The Lousiana New Garde. In 1996 she opened Fresh Food Writing, based in Chicago, and specializes in food writing, consulting, recipe testing and development for a variety of clients.
