Best Olivado Pasta Salad

Makes 4 servings

11 ounces small shell-shaped pasta
3 cloves garlic
8 ounces yellow cherry tomatoes
8 ounces red cherry tomatoes
1/2 cucumber
1 handful black olives, pitted
2 tablespoons fresh chives
1 handful fresh basil
7 tablespoons Olivado Extra Virgin Avocado Oil
4 tablespoons white wine vinegar
Sea salt
Freshly ground pepper

Bring a large pan of salted water to the boil, add the pasta and garlic, simmer for about 5 minutes or until al dente and drain.

Put the garlic to one side for the dressing.

Put the pasta in a bowl.

Cut the tomatoes, cucumber and black olives into small pieces, about half the size of the pasta and place in the bowl with the pasta . Roughly chop the herbs, place these in the bowl.

Using a fork, mash the cooked garlic cloves on a board with a little sea salt and add Olivado Extra Virgin Olive Oil, vinegar and seasoning to the dressing.

Simple Ideas for Using Olivado Avocado Oil
  • Dip a variety of breads into a small bowl of Olivado Avocado Oil for fast and easy starters.
  • Use Olivado Avocado Oil when cooking meats. Brush over roasts before cooking and over chops and steaks before grilling.
  • Cut the fat from French fries. Rather than deep-fry, brush foods with Olivado Avocado Oil and bake.
  • Coat prawns or other seafood with Olivado Gold Lemon-Infused Avocado Oil before grilling.
  • Marinate corn cobs in a mixture of Olivado Avocado Oil, soy sauce, and garlic. Wrap in foil and barbeque.
  • Drizzle Olivado Avocado Oil over your favorite pasta.
  • Beat Olivado Gold Rosemary-Infused Avocado Oil into mashed potatoes (instead of butter or margarine).
  • Slice a baguette in half, drizzle with Olivado Avocado Oil and toast lightly. Place cheese slices on top, sprinkle with parsley and return to oven until cheese is melted.
  • Finish hot vegetables and potatoes with Olivado Avocado Oil or Olivado Gold Rosemary-Infused Avocado Oil instead of using butter.
  • Spread Olivado Avocado Oil on toasted sandwiches, instead of butter or margarine.
  • Lift the taste of a creamy soup with a teaspoon of Olivado Avocado Oil.
  • Mix Olivado Avocado Oil with balsamic vinegar and lemon or lime juice and pour over salads.
  • Drizzle Olivado Avocado Oil around edge of main dish plate as a spectacular garnish.
