Food for Thought

One reason many of us love cooking is because it is a way we can give our love to friends and family throughout the year. While the holiday season brings thoughts of giving to the forefront, a special book called Rambam’s Ladder by Julie Salamon underscores our basic human need to reach out to others all year long. As Anna Quindlen said in her graduation speech, A Short Guide to a Happy Life, 2000, “All of us want to do well. But if we do not do good, too, then doing well will never be enough.”

Rambam’s Ladder: A Meditation on Generosity and Why It Is Necessary to Give (Workman Publishing; 2003; $18.95/hardcover; ISBN: 0-7611-2809-3) looks to the guidance of the 12th-century physician, philosopher, and scholar Moses ben Maimon, known to the Greeks as Maimonides, and to his followers as Rambam. A source of wisdom for Jews, Christians, and Muslims alike, Rambam created a simple, yet exquisitely elegant, eight-step “Ladder of Charity” or “Rambam’s Ladder.” There is no better time than now to consider Rambam's inspirational message.

This holiday season we hope you have the opportunity not just to think about good cooking and good food, but about all that is good. We believe that like cooking, kindness is something we can all be good at with a little practice. The recipe for kindness is simple, and the ingredients list is short and highly accessible.

Happy Holidays from Lisa Ekus

Tough or Tender?

Tenderness in cakes, cookies, and pastry is often a matter of proper measuring, mixing, and timing. Toughness can result frommeasuring flour inaccurately, using too much flour or the wrong flour, or too much mixing after the flour has been moistened in the batter. – From BitterSweet

The Great Cookie Exchange

For a fun holiday party this year, why not try a cookie swap? Have each friend bring two dozen of his or her favorite cookies – one dozen to eat and one dozen to give away – along with copies of the recipe. Party guests then get to take home a wonderful sampler tray of tasty cookies to enjoy, armed with the recipes to make them again.

What is Kwanzaa?

The day after Christmas, a wonderful seven-day long festival called Kwanzaa beings. … Since Kwanzaa was created in 1966 by Dr. Maulana Karenga, it’s become enormously popular and now is celebrated by millions of African-American families. The celebration focuses on seven principles that contribute to the unity of the black family and on how these can be applied to daily life. The principles are unity, self-determination, collective work and responsibility, cooperative economics, purpose, creativity, and faith. – From The Kids' Holiday Baking Book

For the Global Gourmand

Pristiños (crullers) and buñuelos (buns) are the classic Christmas dessert in Ecuador and many other South American countries. Similar fritters, called picarones in Peru and sopapillas in Chile, are made with yeast instead of baking power, and the dough is mixed with pureed squash. – From The South American Table

Of course we’re a bit biased, but we can’t help but ask: Who can resist a cookbook?

There’s a reason why cookbooks continue to be one of the strongest selling segments of the world book market: They can be picked up over and over again, can be read in minutes or lingered over for hours, can be shared with friends and family, and they are often passed along the generations. Most importantly, they are tools that entertain, guide, and inspire (not to mention satiate our desire to nourish our bodies and souls).

Whether you’re looking to share a good read, enhance a friend or family member’s kitchen, grace a coffee table with gorgeous photography, or enlighten your favorite Trivial Pursuit player with fascinating food and wine facts, there’s a cookbook out there for everyone. Really. There are 24,000 (!) new food and wine titles each year worldwide, according to a market analysis by Gourmandbooks founder Edouard Cointreau.

This year’s cookbook selection is sensational. Read on for a roundup of more than 20 cookbooks that we’ve selected as great gift ideas. Look to the LAST LICKS section for outstanding recipes from appetizers through desserts that are ideal for entertaining (and some recipes also make heartfelt gifts, too). You don’t even have to add wrapping paper or a bow to make a cookbook compelling.
