Founder of American Personal Chef Association

Growing up with an Eastern European grandmother whose accomplished culinary and teaching skills were extraordinary, Candy Wallace knew quickly that food was in her "blood." Later in her hometown of Washington, D.C., Candy found herself in the midst of the embassy and congressional dinner party circuit both entertaining and attending the grandest dinner parties one could imagine. Following her love for cooking and entertaining, Candy opened "Taste," a successful party and catering business in the Los Angeles area, and she completed the Masters Series Course at J. C.'s Kitchen Cooking School in San Diego.

Corporate America took over and for the next twenty years, Candy found herself in executive positions in sales, advertising and marketing. As Executive Director of Fundraising Concepts, Inc. in Los Angeles, Candy helped develop the "Carry the Torch" fund-raising campaign for the U.S. and International Olympic Committees in preparation for the 1988 Olympic Games in Seoul Korea. This opportunity to travel fueled her interest in world cuisines and her passion for the food industry.

In 1992, after retiring from the corporate world, Candy realized that she needed to return to her life's loves, cooking and teaching. The time constraints of busy professionals and meal preparation intrigued Candy, and she viewed this as a creative opportunity for chefs wanting more than foodservice and institutional positions. Always the entrepreneur, Candy quickly formalized and developed a new culinary career, and the Personal Chef was born! Candy’s Personal Chef business "The Serving Spoon" in San Diego operated full time for the next 3 years.

In 1995, Candy co-founded and launched the first Personal Chef Association and Personal Chef Institute in San Diego. From business plans, educational materials, standardized recipe software, and an annual convention where Personal Chefs gather to learn and grow, Candy soon became a key figure and mentor. In 1996, the American Personal Chef Institute (APCI) began operation as the first Personal Chef enterprise on the Internet, offering both training and ongoing professional support. Chef Mike Sodaro - Downers Grove, ILChef Mike Sodaro grew up working in a small Italian restaurant and immediately considered a culinary career. But life happens and instead he earned a degree in Chemical Engineering from the University of Illinois and found himself working as an Environmental Engineer in the corporate world. Ten years later, his original culinary passion gnawing at him, Mike made a decision that would change his life. He attended the Culinary School at Kendall College in Evanston, IL.
