Better for You... Better for the Environment!
Why old-style prairie cooking may be making a modern day return
Time magazine calls grass-fed beef "the new health food!"
It's something most Americans eat every week: red meat, even though we constantly hear how unhealthy it can be. But what if you were told that not all beef is bad for you? What if you learned that when beef is raised a certain way it can actually be beneficial?
Sourcebooks is proud to present THE PRAIRIE TABLE COOKBOOK by renowned journalist Bill Kurtis.
THE PRAIRIE TABLE COOKBOOK includes favorite recipes from:
- Chef Charlie Trotter
- Chef Rick Bayless
- Executive Chef Paul Katz
- Will Rogers, Gene Autry and Dale Evans
- Chef David Burns
- Kansas Governor Kathleen Sibelius
- Dodge City Mayor Jim Sherer
In THE PRAIRIE TABLE COOKBOOK, Kurtis takes a new look at food and life on the American western frontier and how some forgotten cattle techniques can help us today. Each chapter contains engaging stories and personal insights from people who lived and struggled on the American prairie in the Nineteenth century, lush color photographs, and of course irresistible recipes. Kurtis even provides engaging lessons explaining the cattle production of the old west, the magic of grasses and the prairie and why he chose to be a grass-fed rancher himself.
Why Grass-Fed Ranching?
Most of the beef you buy in stores is corn-fed and that's a cause for concern. E. Coli only comes from cattle fed on corn! On top of that, 75-percent of antibiotics in the U.S. go to corn-fed or grain-fed livestock because of the problems corn causes during digestion. That's why Bill decided to put together a 10,000 acre ranch where cattle can feed on natural grasses that soak up the minerals and nutrition that produce healthy, more delicious beef.
Is Grass-Fed Really More Healthy?
Yes! Salmon isn't your only source for Omega-3's; grass-fed beef is too! It should make sense: the cleaner the beef, the healthier for you and the environment! Grass-fed beef balances Omega-3 and Omega-6 fatty acids the same way that wild salmon, coldwater fish, or flax does... and it's the only other source that you can find in the wild.
But Does It Taste Good?
The decision is unanimous... Yes! And with over 100 recipes from some of the world's leading chefs like Rick Bayless, Charlie Trotter and more, you'll be cooking up mouth-watering concoctions that combine the old world and the new for years to come!
